Maize & Malt Bengaluru Brings Pork & Pints Culinary Fest

India's regional pork traditions are being brought together through Pork & Pints, a month-long culinary festival hosted by Maize & Malt throughout August. Eight pork preparations from across the country are being presented alongside freshly brewed craft beer, with regional recipes and cooking traditions being retained. A culinary journey spanning Kodagu, Malnad, Kerala, Goa, Mangaluru, Nagaland, Assam and the Anglo-Indian tradition is being offered through the festival.

The menu features Kodava Pandi Fry, Malnad Pepper Pork Fry, Kerala Pork Ularthiyathu, Goan Pork Cafreal, Mangalorean Pork Bafat Fry, Naga Smoked Pork with Bamboo Shoot, Assamese Til Pork, and Anglo-Indian Devilled Pork. According to Maize & Malt, regional ingredients and traditional cooking techniques are being used to preserve the distinct identity of each preparation, with the focus being placed on authenticity rather than reinterpretation.

The regional spread of the menu is being reflected in the contrasting ingredients and cooking styles represented across the eight preparations. From the pepper-forward flavours associated with Malnad to the smoked pork and bamboo shoot combination from Nagaland, distinct culinary traditions are being presented within a single festival menu. The Anglo-Indian Devilled Pork is also being included to represent the evolution of pork dishes within India's Anglo-Indian culinary heritage.

Craft beer is being given a complementary role throughout the festival, with a recommended Maize & Malt brew being served alongside every preparation. The pairings are being selected to work with the individual flavour profiles of the dishes, creating combinations that allow both the food and beer to be experienced together. The festival is therefore being positioned as an exploration of regional pork cuisine alongside craft brewing.
