Maverick & Farmer, known for its experimental approach to artisanal coffee, has launched Jaggeries of India, a limited-edition menu celebrating the diversity of traditional Indian jaggery. Four distinctive coffee creations have been developed using regional ingredients, house-made preparations and innovative brewing techniques, offering a contemporary interpretation of India's jaggery-making heritage.
The new collection features Coconut Four Ways, The Lucky Bastar, Chukka Kaapi and Kung Fu Pandan, each highlighting the distinctive flavour and character of jaggery sourced from different parts of India. Ingredients ranging from Tamil Nadu's coconut palm jaggery and Bastar's Mahua flowers to Kerala's Marayoor jaggery and Mangaluru Bella have been incorporated into the menu.
Coconut Four Ways brings together coconut palm jaggery from Tamil Nadu, 24-hour cold brew, tender coconut water, tender coconut ice cream and toasted coconut milk powder. The Lucky Bastar features an in-house syrup prepared from Mahua flowers sourced from Bastar, paired with Parama Ristretto, Earl Grey-steeped Mahua and a caramelised flower garnish.
Inspired by Kerala's traditional flavours, Chukka Kaapi combines Marayoor jaggery with organic ginger, dried tulsi and Malabar pepper, creating a warming, spice-forward coffee. Kung Fu Pandan blends Mangaluru Bella with ristretto, fresh pandan extract and freeze-distilled milk, resulting in a creamy beverage with delicate sweetness and aromatic notes.
The collection reflects Maverick & Farmer's continued focus on ingredient-led innovation, with techniques such as cold brewing, steeping, ristretto extraction and freeze distillation being used to highlight the versatility of regional Indian ingredients. Through Jaggeries of India, traditional sweetening practices are reimagined within contemporary specialty coffee.
The limited-edition menu is available across Maverick & Farmer outlets in Bengaluru at Church Street, Ulsoor, Koramangala, Kothanur and Cunningham Road, as well as Anjuna, Goa.
