The festival is being presented as a celebration of the state's culinary heritage, with a curated selection of traditional and contemporary Hilsa (Ilish) preparations. Calcutta, signature offerings include Shorshay Ilish, the classic mustard-based preparation, Ilish Bhaja, Ilish Paturi, steamed in banana leaf with mustard, Chire Ilish Ghonto, Smoked Hilsa, Ilish Panikhola, Panta Ilish, and the contemporary Ilish Fish Finger. Each preparation has been selected to represent different regional cooking styles while preserving the fish's distinctive flavour.
